Delicious, healthy & easy Lo mein
What you will need:
6 oz. steak cut into thin slices, easy to do when still slightly frozen
2-4 oz. of mushrooms, (I used a mix of shiitake, oyster, and cremini)
1/2 large red pepper cut into matchsticks
2 pieces of bok choy, cut into small pieces
4 cloves of minced garlic minced
2″ piece of ginger root microplaned
3 large green onions and most of the tops cut on a sharp angle
2 Tablespoons of coconut oil or peanut oil
2 Tablespoons of low sodium soy sauce or (Braggs amigos or Coconut amigos)
1 tablespoon of sesame seed oil
8 ounces of organic spaghetti pasta cooked according to pkg. & drained
