Easy and very tasty with fresh pineapple and mangos
Recipe:
This can be used with just about any kind of meat or fish:
What you will need is
1 fresh pineapple (non GMO) save all juice & put in a large bowel with all ingredients.
2 -3 fresh ripe mangos
1/4 cup red onion finely minced
1 jalapeno pepper veins and seeds removed & then finely diced
small bunch of organic (if possible)cilantro rough chopped except for large sprig for looks
1 Tablespoon hot sauce

We usually serve parboiled rice made with vegetable stock instead of water & a tablespoon of coconut oil. Cooked cooled & used the next day for a LOW glycemic index food (around 30) has about 85% of the nutrition that brown rice has @ 1/2 or less G.I. count of brown rice at appox. 68
