Sauerkraut (super-food)

Super easy sauerkraut, the new super food. Check out all these

What you will need:
1 head of red or green organic cabbage
2 & 1/2 teaspoons of pickling salt  (we use pink salt)
knife for cutting , mason jar  – approximately 20 ounces
of shredded cabbage  and 2 &1/2 teaspoons of salt (non iodized )
If you are worried that something will get into the jar, you can always
use a double seal plastic bag filled 1/2 full of water and sit that in the
top of the jar. That will seal it and help weigh down the cabbage.
always discard anything that is pink, or off colored or smells bad!
Always refrigerate when done fermenting your sauerkraut!
Note:  I found that tripling the paper towel helps  the juices from drying out.
